Michael Eskin has made important contributions to Canada’s canola industry. A food chemistry professor at the University of Manitoba, he has conducted pioneering research on edible oils. His identification of the chemical, physical and performance
properties of canola oil helped lay the foundation for its development as a marketable product. In addition to serving on the boards of several academic organizations and journals in his field, he is an esteemed teacher who has creatively used rap music to teach his students about lipids in food.
